  • Garlic paste – 1 tbsp

  • Whole green cardamoms – 4

  • Cloves – 5

  • Bay leaves – 2

  • Cinnamon stick – 1

  • Red chili powder – 1 tbsp

  • Turmeric – 1/2 tsp

  • Coriander powder – 1 tbsp

  • Garam masala powder – 1/2 tsp

  • Kewra water – 1 tbsp

  • Almonds – 10 (blanched & blended into paste, optional)

  • Fried onions – 2 tbsp (for garnish)


🍛 Method

  1. Heat oil and sauté whole spices:
    Heat oil or ghee in a heavy-bottomed pot. Add green cardamoms, cloves, black peppercorns, bay leaves, and cinnamon. Let them sizzle for a few seconds.

  2. Sear the meat:
    Add meat along with ginger and garlic paste. Cook on high heat for 8–10 minutes until the meat changes color and the raw smell disappears.

  3. Add spices & yogurt:
    Mix in salt, red chili, turmeric, and coriander powder. Cook for 2 minutes, then add whisked yogurt and half of the fried onions. Cook uncovered on medium heat until the oil separates.

  4. Simmer to perfection:
    Add a cup of water, cover the pot, and let it simmer for 45–60 minutes until the meat is tender and the oil rises to the top.

  5. Finishing touch:
    Mix in kewra water, garam masala powder, almond paste (if using), and the remaining fried onions. Simmer for another 5 minutes.
