  • Lemon juice – 2 tbsp

  • Ginger garlic paste – 1 tbsp

  • Red chili powder – 1 tsp

  • Mustard powder – ½ tsp (optional)

  • Vinegar – 1 tbsp

  • Yogurt – ½ cup

For Coating:

  • All-purpose flour (maida) – 2 cups

  • Cornflour – ½ cup

  • Baking powder – 1 tsp

  • Salt – ½ tsp

  • Black pepper – ½ tsp

  • Red chili powder – ½ tsp

  • Cold water – for splashing

  • Oil – for deep frying

  1. Marinate chicken with all marination ingredients. Leave for 2–3 hours or overnight in fridge.

  2. Mix all coating ingredients in a separate bowl.

  3. Dredge marinated chicken in dry flour mix. Splash cold water lightly on the coated chicken, then dredge again for extra crispy texture.
